Eggless Pineapple Cake Recipe by Manjula
Today I will be making eggless pineapple cake.
Many of the viewers have requested for eggless cake.
This is a very simple, easy and very delicious cake.
This cake you can serve anytime of the day.
And dress it up according to the occasion.
This recipe will serve 8-10.
For this recipe we need:
1.25 cups of all purpose flour (maida)
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 teaspoon of cardamom powder
1/2 can or 7 oz sweetened condensed milk
1/2 cup of unsalted melted butter
One 20 oz can of crushed pineapple
First I am going to drain the juice from the crushed pineapple.
I am going to use the juice and the pineapple both in the cake.
Now I am going to mix all the dry ingredients together.
All purpose flour
Baking powder
Baking soda
Salt
And cardamom powder.
Just mix it together really good.
So first I am going to add the condensed milk.
Butter
1/2 cup of pineapple
And 1/2 cup of juice.
Fold it together, gently.
Don't mix it like this.
It should be just folded.
You can already smell the cardamom and pineapple
together smells really good.
So all the ingredients are mixed well.
I have here 8x8 greased cake pan.
I have preheated the oven on 325 degrees.
So I am going to put this in the oven for about 25 minutes.
I am going to put the cake for about 25 minutes.
And this is on almost in the center.
Don't keep it very high otherwise it will not bake evenly.
This has been 25 minutes
so I will check if the cake is ready.
So as you see it has started leaving the side
that's the one indication that the cake is ready.
Another you put the knife through and it should come out dry.
So it looks great.
This has been few minutes, it has been sitting out
and little bit cool off.
So I am just going to run the knife through.
And put this over the plate.
Turn it around, just tap it.
Cake is out.
Looking really good, very nice color.
It is looking good.
So while this is still hot I am going to prick this
few places with the fork.
And brush some of this pineapple juice we had left over
so this will keep it moist.
I think we used about couple of spoons.
And now let this get cold before we are going to slice it and serve.
Today I am going to serve this cake with
little bit cool whip or whipping cream.
Some pineapple.
And few pieces of walnut.
Cake looks great and I know it tastes very good.
